Chef Wen Xie’s cuisine, rooted in Cantonese tradition, undergoes a fusion journey with elements from Shanghai, Sichuan, Chaozhou, Suzhou, Hunan, Northeast, and more, resulting in a distinctive “New Chinese Cuisine.” The restaurant’s name encapsulates eight vital elements — mountains, water, sea, land, tea, wine, people, and art, while its five heritages encompass culture, terroir, classic, innovation, and fusion. 85TD seamlessly blends the classic with the innovative, preserving traditional flavors to offer customers an unparalleled culinary experience.

Chef Introduction

Chef Wen Xie

Chef Wen Xie has been honing his culinary skills for nearly 50 years, starting his journey at Fook Lam Moon in Hong Kong, where he mastered the essence of Cantonese cuisine. He then ventured to various places including the Netherlands, Guangzhou, Shanghai, Nanjing, and Shenzhen, exploring extensively, undergoing numerous enriching experiences, and acquiring a profound mastery of culinary artistry. In 2017, Chef Wen Xie came to Taiwan to serve as the head chef at Ya Ge, a Chinese restaurant at the Mandarin Oriental Taipei, where he achieved the prestigious honor of maintaining a consecutive MICHELIN star from 2018 to 2020. During his time in Taiwan, Chef Wen Xie has delved into the abundant produce of the island’s four seasons, utilizing ingredients sourced from its vast lands, forests, oceans, and fields. With a pure attitude towards cooking, dedication to quality ingredients, and an unquenchable passion for the culinary arts, he leads his team to provide high-quality and meticulous service, presenting classic delicacies to gourmet enthusiasts, thus establishing Taiwan’s highest-tier Chinese culinary palace at Taipei 101, the tallest building in Taiwan.
